Drove 2 hours to the Route 66 BBQ festival in Tulsa last Saturday and got there at 10:30 thinking I was early. Walked the whole lot and every single brisket stall had the 'sold out' sign up, one guy named Dale from a Norman crew told me he was down to his last 3 racks of ribs by 9:45. I get that these pitmasters sell out fast, but why is there no posted schedule or heads up for people coming from out of town? Anyone else run into this at festivals, or do you just show up at like 7am now?
Dale from the Norman crew is who you want to talk to next time, because that guy was probably set up by 6am. Here is the deal though, brisket is not the thing that sells out first at most of these festivals, it is usually the ribs and the burnt ends that go quick while brisket holds a bit longer since folks smoke so much of it. What bit you is that Route 66 fest in Tulsa pulls a huge early crowd from all over, Oklahoma City, Joplin, even Dallas folks drive up, so the locals know to roll in when the gates open around 8. I have been to that one twice and both times the brisket was gone before 11, so 10:30 is not early at all there, it is late. Festivals like this do post vendor start times on their social pages the week before, but they never post when each item runs out because nobody can guess that. Your best move is get there at opening, hit the brisket stalls first, then circle back for the rest.
