Watched a sweep in Portland use a shop vac on a gas insert flue and it changed my whole setup

Wait, a shop vac on a gas insert flue? That only works if the liner is sealed tight, otherwise you're just sucking air from the room and stirring up dust. Most gas inserts need a proper brush and rods, the vac is just the cleanup step at the end.
