Update: I finally tried a water based poly on a table top

I mean, everyone says oil based is the only way for a tough finish, but after using General Finishes water based poly on a maple table, the clarity and lack of smell was a game changer. It's been six months with zero yellowing. Has anyone else had a good long term result with water based on high use pieces?

That clarity and no yellowing is exactly why I switched, my kitchen table still looks new after two years.

Weird, mine started to get a little hazy after just a few months. Maybe it's the light in my room.

Yeah, some brands just hold up better. My old one yellowed in a year, but the new stuff has been fine.
