Heard a baker in line at King Soopers say she never checks her oven temp, and I feel bad for her cookies
She was chatting with a friend about how her chocolate chip cookies always burn on the bottom, and she blamed the recipe. Oven thermostats can be off by 25 to 50 degrees, which is enough to wreck a batch every single time. Has anyone else had a wonky oven that ruined their go-to recipe before they figured it out?
25 to 50 degrees off sounds about right for an older oven, but I have to disagree that it always ends in burnt cookies. Most recipes call for 350 and a lot of ovens run hot, sure, but the fix is usually just an oven thermometer for 6 bucks and pulling the rack up one notch. If her bottoms burn and the tops look raw, that is a rack position or dark pan problem way more often than the thermostat. My mom baked for 30 years on a crooked oven in a rental house and never burned a thing, she just knew where to put the sheet and how long to leave it. Blaming the recipe first is backwards, but blaming the oven without checking any of it is the same mistake in the other direction.
