Pro tip: stop greasing your cake pans with butter, I figured it out after 11 years of stuck bottoms
I was at my aunt's place in Dayton for her birthday and she handed me a slice of her pound cake that slid out of the pan in one clean piece, no parchment, nothing. I asked what she did and she just pointed at a can of baking spray sitting on her counter. I had been rubbing cold butter on my pans and dusting them with flour since I was 19, and half my bundts still came out with a chunk missing. Now I keep the spray next to the stove and I have not lost a cake bottom since. Did anyone else switch from butter to spray and notice a real difference, or is it just my oven being weird?
Same thing happened to me with my mom's angel food cake pan. I was doing the butter and flour thing for years and my cakes would tear every single time I flipped them. Switched to the spray about two years ago and now they drop right out, not even a crumb left behind. My wife thought I was crazy for changing something that "worked" but she stopped complaining once she saw the results. The flour dusting was actually making things worse because it left a dry layer that stuck to the cake. Spray is just easier and it covers all the little corners of a bundt pan way better than my fingers ever could.
