PSA: weighing flour changed my sandwich bread after 2 years of scooping
For two years I scooped flour straight from the bag with the measuring cup, and my sandwich loaves kept coming out dense and short. A baker at a shop in Asheville told me one cup of flour can weigh anywhere from 4 to 6 ounces depending on how packed it is, so I bought a $12 kitchen scale and started weighing 120 grams per cup. Same recipe, same oven, and the loaf rose a full inch higher on the first go. I always figured grams were for fussy people, but now the dough feels the same under my hands each time. Anyone else switch to weighing, and did you keep the scale out or shove it back in the drawer?
