Showerthought: that one Saturday in February when I baked four loaves and three actually worked
I still think about this one Saturday back in February when everything just clicked in my kitchen. I had bought a bag of King Arthur bread flour the week before, and I decided to spend the whole morning messing around with sourdough instead of doing my laundry. The first loaf came out flat as a pancake because I forgot to score it, but the next three rose so tall I had to text my sister a photo. I remember pulling the second loaf out at 10:40am and hearing the crust crackle, which almost never happens for me. The fourth one I let rise a little too long so the crumb was tight, but it still tasted fine with butter. My wife came home from her shift and said the house smelled like a real bakery, which never happens in our place. Then the next weekend I tried the same recipe and every single loaf turned into a brick, so I honestly can't explain what was different. Does anyone else have a random good day like that and then chase it for months?
