Crossed 50 different pitmasters I've seen live this year, which feels kinda wild.
I keep a list in my notes app and just realized the count after hitting a comp in Kansas City. Anyone else track something specific like that?

Remember that feeling, chasing a perfect bite. Honestly, I'd go back for a simple brisket sandwich from a roadside shack in Texas. The bread was cheap and white, but the meat was so tender and smoky it just fell apart. It wasn't fancy, just done right. That's the trick, finding a place that nails the basics on one thing. Sometimes you don't need a whole rack of ribs, just one perfect sandwich.
