My 12 year old thermometer gave out mid brisket at 3am in Austin
Was doing an overnight packer brisket for a friend's birthday in Austin last Saturday, and around 3am my old dial thermometer just quit, needle stuck at 190 and wouldn't move no matter what. I didn't catch it for about 40 minutes because I was dozing in a lawn chair, so I had no idea what the actual pit temp was. Ended up running inside for my wife's instant read and sticking it through a potato as a poor man's probe clip so it wouldn't touch the grate. Turned out the brisket was fine, pulled at 203 at 11am, but that was a close one. What do you all keep as a backup when your main gear dies on an overnight cook?
