My rushed slicing cost me a juicy brisket last Sunday

Cutting meat right after it comes off the heat makes all the juices run out and leaves it dry.

Oh man, that is the WORST feeling. I ruined a whole pork shoulder that way once, I was just too hungry to wait. That rest time is no joke, it makes ALL the difference.

Didn't you let it rest first? Gotta give it time for the juices to settle back into the meat. That waiting period is the difference between dry and perfect every time.
