Seriously, that marathon smoke wasn't worth the hassle

I did a 22-hour pork shoulder. Everyone says long cooks are best. Mine turned out dry. Not tender like promised. I think shorter cooks can be just as good.

My last long cook could have been used as a doorstop. Maybe we're overthinking this.

Nah that's just a sign your thermometer probe was in the wrong spot, lol. Gotta check the thickest part away from bone or fat.
