Seriously, that marathon smoke wasn't worth the hassle

I did a 22-hour pork shoulder. Everyone says long cooks are best. Mine turned out dry. Not tender like promised. I think shorter cooks can be just as good.

Doorstop meat is the worst, lol. My last long cook was just as dry. Maybe shorter times really are better.

Nah that's just a sign your thermometer probe was in the wrong spot, lol. Gotta check the thickest part away from bone or fat.
