A Tuesday night when a $4 bag of lentils saved my week

I had a rough stretch a couple months ago where my fridge was basically empty except for some carrots and an onion. I pulled out a bag of lentils I got at Aldi for $4 and made a big pot of soup with whatever spices I had left. That one pot fed me for four days straight on the night shift. Has anybody else had a random cheap ingredient just bail them out like that?

Wait, didn't you say that one $4 bag lasted you four days straight? That checks out, I mean lentils are basically magic with how much they expand. I did the same thing with a bag of dried chickpeas once, soaked them overnight and made a big batch of curry, and it seriously carried me through a week of overtime. Carrots and an onion is exactly the kind of combo that works, you don't need fancy stuff when you've got legumes doing the heavy lifting. The spices are the real secret though, a little cumin and garlic powder can make even the simplest soup taste like you actually tried.
