Just realized I can stretch one rotisserie chicken into 4 full meals
I used to buy raw chicken breasts every week and got so tired of the same dry baked chicken for dinner. Last month I picked up a $6 rotisserie chicken from the grocery store in Columbus and decided to break it down myself. I got about 3 cups of meat from it, which gave me tacos one night, a big pot of chicken and rice soup, and then two lunches worth of chicken salad sandwiches. The bones went into a slow cooker with some onion scraps and celery ends for 8 hours, and that broth made a whole other batch of soup. Total cost per meal came out to around $1.50 each, which beats the $12 I was spending on chicken breasts alone. Anyone else doing the rotisserie chicken thing, or do you have a better way to use the leftover bones?
