Warning: dried beans beat canned beans and it is not even close
I used to buy canned beans without thinking twice, usually 4 or 5 cans a trip at around $1.29 each here in Columbus. Then my sister handed me a 2 pound bag of dried pinto beans for $2.49 and I figured I would try it once. Soaked them overnight, simmered them for about 90 minutes with onion and a bay leaf, and I got the same amount as 6 cans for less than half the price. The taste difference shocked me more than the savings, canned ones are soft and kind of tinny and these actually taste like something. I have done this with black beans and chickpeas too and same deal every time. The only real cost is planning ahead, which took me maybe 3 tries to get right. Anyone got a trick for cooking them faster, like a pressure cooker setting that actually works?
