Why do so many people think you need fresh herbs for cheap meals? My dried basil worked just fine in my $3 pasta sauce.

Fresh herbs" and "dried basil" are two different things, though.

Yeah, you're right about them being different. I read somewhere that dried basil is way more concentrated, so you use less. Like if a recipe calls for a tablespoon of fresh, you'd only use a teaspoon of dried. But the flavor isn't the same at all. Dried is kinda dusty and stronger in a bitter way, while fresh is brighter and lighter. I mean, they work in totally different dishes for me.
