A line cook at a diner in Boise taught me more in one shift than my last two years of culinary school
I was staging at this little 24 hour diner in Boise last month, mostly just prepping and staying out of the way. Around 2am this older line cook named Ray watched me plate a burger and sides and walked over and said, that plate's fine but your hands are too slow, you're thinking about the ticket instead of the food. He showed me how he sets up his station with everything within one step, no reaching, no cross-body moves, and he could fire 6 orders in the time it took me to do 2. I've been in kitchens for 4 years and nobody ever broke it down like that, the whole thing was about economy of motion and not fancy knife skills. It was a $12 an hour job with no benefits and this guy cooked circles around everyone I know with a culinary degree. Has anyone else worked with someone like that who just learned it on the line and knew stuff no textbook catches?
