Hit my 500th dinner service last Friday and I can't decide if I should slow down or keep pushing
Last Friday at my spot in Sacramento I ran my 500th dinner service since we opened, and honestly it snuck up on me way more than I thought it would. Half of me wants to start cutting back to four nights a week so I don't burn out, but the other half thinks momentum like this is too good to mess with. My sous keeps telling me I'm crazy for even thinking about it when we're finally hitting our stride. Curious what other people did when they hit a number like this, did you throttle back or just keep the pedal down?
