Just realized I should stop counting drops, a line cook at Franklin BBQ set me straight
I was drizzling sauce from a squeeze bottle to save product and he said you are losing time on every plate for pennies. Now I use a 2 oz ladle and my ticket times are down 40 seconds since Tuesday, anyone else switch off the squeeze bottle for high volume service?
A 2 oz ladle is actually pretty big for sauce on a plate. Standard portion for bbq sauce is usually 1 to 1.5 oz, so if you're hitting it with 2 oz you might be giving away more product than you think. Franklins runs a tight ship so that guy probably meant well, but I'd check what your spec actually calls for before you make the switch permanent. Going from a squeeze bottle to a ladle can help with speed for sure, just make sure the portion size lines up or your food cost will creep up on you.
