The sous chef who said my sauce was too thin for 30 minutes straight
He kept yelling at me during service last Friday to reduce the veal stock more, I finally listened and the plate looked way better. Anyone else have a senior cook whose nagging turned out to be spot on, or do they just do it to mess with you?

My last head chef yelled "taste it again, it's flat" at me like six times in one shift and I was so mad, then I actually tasted it and yeah, it was flat. I was just too proud to add the acid. So now when someone bugs me about the same thing over and over I try to just do it once and taste it again before I dig my heels in. Half the time they're right and half the time they're just on a power trip, but it costs me nothing to check. Meanwhile I've definitely been the annoying one yelling about salt on somebody else's station, so I guess we all take turns being the nag.
