I used to be the person who said small deposits were overkill for small jobs, and I'd just trust people. That changed after a bakery in Sacramento sat on my $450 logo invoice from January to August, with me sending a polite nudge every 2 weeks. I finally got paid 7 months later after I posted the work-in-progress shots on my portfolio and their new manager saw the unpaid invoice note I left in the file name. I spent more time chasing that money than I did drawing the actual mark, which took one weekend. My new rule is 50% up front no matter how tiny the job is, and honestly I should have made that switch years ago.
