I started fermenting peppers last August with one sad jar of jalapenos and now there are 47 mason jars stacked in my closet like a weird wall. My roommate counted them on Sunday and asked if we needed to talk about it, which honestly felt fair since the door barely shuts now. The thing is, jar number 40 was a batch of habanero and mango that I forgot about for 6 months, and it turned out so good I nearly cried. Now I'm worried the closet smells like a pepper farm and my landlord does inspections twice a year. Do you all keep a tally or do you just let the jars pile up until someone says something?
