Just realized reusing kraut juice cuts down on plastic waste
I save the liquid from my finished sauerkraut jars to use as a starter for new ferments. It means I don't have to buy those little packets of starter culture, which come in plastic. My new batches kick off faster too, which is handy. Idk, maybe it's just me but seeing fewer tiny plastic bits in the trash feels good.

Wait, old juice? That sounds like a fast track to mold city. Fresh brine works because it's active, but anything sitting around is just a gamble. You're better off just salting the cabbage and waiting the extra week.
