Kombucha brewing with a heated mat vs. just letting it sit in the cupboard - I need to hear your takes

I've been making kombucha for about 8 months now, and I started out just keeping my jar in the warmest corner of my kitchen. It worked okay, but the fermentation was super slow in winter, like 3 weeks for a batch. Then my friend swore I needed a heating mat with a thermostat wrap around the jar. I thought it was overkill, like people buying fancy gear for no reason. But I grabbed a $25 one off Amazon anyway, and my batches finish in 8 days now, consistent every time. The taste is sharper too, less vinegary. On the other hand, my neighbor says mats can overheat and kill the SCOBY if you don't watch them close. So which side are you on - is the mat a game changer or just another gadget that makes things worse?

Mat with thermostat is worth every penny, speeds up my brew too.

Dude the mat is totally a game changer, lol. I had the same slow winter problem and added one last year, now my batches are done in 7-9 days without fail. Just get one with a thermostat and you're fine, the overheating thing is only if you cheap out or leave it on high with no control.
