My neighbor's comment about his sourdough starter made me check my own...
I was chatting with my neighbor, Frank, over the fence yesterday. He saw my jar of starter on the counter and said, 'You know, I lost my 5-year-old starter last winter because I got lazy with the feedings... thought it was fine in the back of the fridge for a couple months.' He said it looked okay when he pulled it out, but the bread it made tasted flat and wrong. That hit different because I've been doing the same thing, just sticking my jar in the fridge and forgetting about it for weeks. I pulled mine out this morning and it smelled a bit off, not that nice sour yogurt smell. I think I've been pushing my luck, treating it like it's unbreakable. Has anyone else brought a starter back from the edge after neglecting it in the cold?

Honestly, that bit about the starter smelling off and not like sour yogurt is so familiar. My buddy had a jar he forgot in his fridge for like three months. It had this weird gray liquid on top and smelled like old beer. He fed it with whole wheat flour twice a day for a week, just a tiny bit, and it actually came back. The first few loaves were still a bit weak though.

That gray liquid means it's already dead.

My grandma used to call that gray stuff "hooch" and said it meant the starter was hungry, not dead. She'd just pour most of it off and give it a good feed with rye flour.
