Can we talk about the difference a digital scale made in my sourdough?
I was getting really uneven loaves from my starter, and a baker friend in Denver told me to stop using measuring cups for the flour. I switched to weighing everything in grams, even the water, and my last three batches have been perfect. Has anyone else found that one small change fixed a big problem?

Honestly, is a scale always the fix? My grandma never used one and her bread was amazing. I found my problem was actually my kneading time, not the measures. I was under-kneading by like five minutes because the dough felt sticky. Once I just pushed through that, even with cup measures, my loaves got way better. Maybe the scale helps some, but it can also be other steps.

My Denver friend said the same thing, total game changer like nora_murphy said. I was off by almost 50 grams of flour per cup just from how I scooped. The scale fixed my hydration overnight. Now my starter behaves the same every time and my crumb is actually open. It just takes the guesswork out so you can focus on the feel of the dough.
