Honestly, I had to choose between a stand mixer with a dough hook or doing it by hand for my sourdough. Went with the hook and my loaves are way more consistent now. What's your go-to method?

Saw a baker online say machines can overwork dough if you're not careful. They argued hand mixing gives you better feel for the texture. Still, gotta respect that consistency from a good stand mixer.

My grandma's mixer has a slow speed for that, and @gracej99, the mess is half the fun.

My old roommate used a bread machine for everything. It made decent loaves, but the pizza dough always came out weird and tough. She swore by the timer function, but I noticed she never checked on it. Sometimes you just have to poke the dough with a finger to know it's done.
