Honestly, my choice to use a stand mixer for my first sourdough in Denver instead of hand kneading for 20 minutes was a total win because it saved my shoulder.

Tbh, I'm curious if people think a machine like a KitchenAid is cheating for artisan bread or if it's a smart move to avoid a classic fail.

Ngl, the whole "smartest cooks know where to put their effort" thing is spot on. If my KitchenAid saves my shoulder and still gets me a good loaf, that's a win. It's not like the bread knows it wasn't kneaded by my own two hands. Honestly, if using a machine is cheating, then so is using an oven instead of a campfire.

My friend Sarah was so proud of her "homemade" pie for the fair. She used a store-bought crust and canned filling, but added her own spices and a fancy lattice top. It won second place, and she still brags about it. The judges never knew, and it tasted wonderful. Sometimes the smartest cooks know where to put their effort.
