We got so trained to want exact steps for everything that we forgot most skills are really just paying attention and adjusting as you go. Your grandma writing "oven lies, trust the smell" is honestly better advice than half the baking blogs out there. It makes me wonder how much of my frustration in general comes from wanting a rule for stuff that doesn't have one.

Honestly the "knee leash" thing is kind of on you though. Any tool that's listening to audio is going to guess wrong sometimes, that's just how speech to text works. You didn't catch it before sending, that's the actual mistake here, not the software. A human typist would've made errors too, just different ones. Three hours of cleanup stinks but that's the tradeoff for not having to type every word yourself in the first place.
