I finally stopped greasing my loaf pans and my banana bread came out clean on the first try
For years my banana bread stuck to the pan no matter how much butter I smeared in there, and last month I tried lining it with a strip of parchment with the ends hanging over the sides. Lifted the whole loaf right out, no scraping, no broken bottom. Anyone else give up on greasing and just go with paper now?
Parchment works but it's not really about skipping the grease. The paper just gives the loaf nothing to grab onto, so it slides right out. You can still grease the pan under the paper if you want, but yeah, the paper is doing the work either way.
