Why does nobody talk about how a $15 kitchen scale can turn a cake fail into a win in one weekend?
My chocolate cakes went from dense hockey pucks to perfect layers after I finally stopped using cup measures and weighed my flour, which was a full 50 grams more per 'cup' than the recipe assumed.
