Bought an offset in March for $700 instead of a pellet smoker, and I'm up at 5am adding splits while my neighbor sleeps in with his wifi controller. For folks who cook on offsets at home, do you run a water pan on long brisket cooks or just spritz?
Watched my buddy do a packer on his offset last summer and he swore by the water pan in the cook chamber, said it kept the flat from drying out on those 14 hour cooks. Then he tried just spritzing every hour on the next one and honestly the bark came out better but the flat was a touch drier. I'd say run the pan if you're doing a full packer and spritz on top of that if you want, it's not an either or thing. His neighbor with the pellet grill slept through the whole thing and still turned out decent brisket, which was annoying to watch. Your mileage may vary but that's what I saw.
slept through the whole thing and still turned out decent brisket" is peak pellet grill energy and I hate that it works. @amy654 your buddy's neighbor is out here winning at BBQ by doing literally nothing while the rest of us babysit a fire all night. Sounds about right though, pan plus spritz is the move for a full packer.
