My neighbor in Phoenix told me to use a water pan in my offset smoker and I thought it was a waste of time

Wait, what kind of meat are you smoking? For a big brisket or pork shoulder, that water pan is a lifesaver. It keeps the air moist so the meat doesn't dry out during those long cooks. My last brisket without one came out tough on the edges. I'd at least try it on your next long smoke and see the difference.

Totally agree, my pork butt was way juicier with a water pan.
