Shoutout to the guy who said to wrap brisket in butcher paper, not foil

I always thought it was a waste of money and stuck with heavy duty foil. Then I tried it on a 16 pound packer last month and the bark was way better, not soggy at all. It still held enough steam to push through the stall without turning the outside to mush. Anyone else make that switch and notice a real difference?

My neighbor swore by butcher paper for years and I thought he was just being fancy. Tbh it's one of those things where the slightly more expensive method actually does the job better, you see that with a lot of tools and materials.

Totally get what you mean about the slightly more expensive method. It's like when you buy the cheap aluminum foil and it tears if you look at it wrong, but the good stuff actually holds heat and doesn't fall apart. Same with tools, a basic drill might get the job done but a better one feels solid in your hand and doesn't burn out. You end up saving money because you're not replacing the thing every year.
