TIL the $200 offset smoker can hang with my buddy's $1200 rig
My neighbor Mike has been preaching about his Yoder for years. I showed up to his place last Saturday with my cheap Oklahoma Joe from Home Depot. He laughed, said I was wasting my time. We ran the same brisket, same rub, same wood. His was a little more even on the bark, but honestly after 8 hours and a 4 hour rest, both were tender and juicy. My bark was a bit softer on the edges, but my family ate both and couldn't tell which was which. I'm not saying cheap is better, just that my $200 unit got me 80 percent of the way there. Has anyone else found big smokestack price gaps matter less than technique and fire management? I keep my vents dialed in with a $5 oven thermometer, and it seems to do the job.

Ha! Laura's over here acting like we're doing NASA-grade science with brisket. Nah, I didn't check grate temps. I poked the meat with my finger and called it good. You're really gonna trust a $5 oven thermometer over your own hands after doing this for a few years? Look, I get that the fancy guys love their gadgets, but at the end of the day we all just want to eat something that doesn't taste like a shoe. If someone needs a $1200 pit to feel confident, that's fine, but let's not pretend it's rocket fuel. My cheap smoker made dinner, nobody went hungry, and I saved a grand. That's a win in my book.
