Everyone laughed at my cheap potluck dish until they tasted it

I was at a work potluck last week and money was tight. I decided to make a big pot of rice and beans with some spices I had. When I put it on the table, a coworker joked about it being simple. But after everyone tried it, they kept coming back for more. I mean, it cost maybe five dollars total. The funny part was when someone asked for the recipe and I told them it was just basics from the pantry. Now a few people are doing their own cheap versions. If you're on a budget, don't be shy about simple dishes because they can be just as good as fancy stuff.

Brought a basic pasta salad to a family thing once and got the same looks. Turns out nobody else made anything with veggies, so it was gone in like twenty minutes. Sometimes the simple stuff just works.

Man, I used to be the same way! I always tried to make the fanciest dish possible to impress people. Then I brought a crazy complicated dip to a party once and watched a bowl of basic chips and salsa disappear instead. That totally shifted my view. Now I get that reliable and simple often beats complicated and weird, especially for a crowd. Your pasta salad wasn't just backup, it was exactly what people actually wanted.

Was it really a win if people only ate it because there was nothing else? Sounds like they were just desperate for something green.

Right? It's not about being the backup plan, it's about being the thing that actually gets eaten. My aunt makes this super plain bean salad for every cookout and people fight over it. Maybe we're all just craving something normal after a table full of weird cheese dips.
