Remember when a bag of dried beans felt like a punishment?

I was cleaning out my pantry the other day and found a receipt from 2019 stuck in my old rice cooker. It was for a single bag of lentils, a can of tomatoes, and an onion, and the total was $4.75. That meal fed me for three days back then, but I remember thinking it was just sad 'struggle food.' Fast forward to now, and that same combo is my GO-TO comfort meal. I think the real change was during the lockdowns, when I had more time to actually learn how to cook them right. I started adding a spoonful of Better Than Bouillon and letting them simmer longer. Now a pot of lentils with some garlic and smoked paprika feels like a real win, not a loss. It's crazy how a shift in skill can totally change how you see a cheap ingredient. Anyone else have a 'sad' pantry staple they've learned to love?

Oh totally, it's all about the technique! I used to think rice was just boring filler, but learning to toast it in a little oil before adding broth changed everything. It went from being the thing I ate because it was cheap to the thing I crave. That little bit of extra care makes it taste rich and nutty, not sad at all. It's wild how a simple trick can flip a whole ingredient in your head.

My old roommate swore by toasting rice and I thought it was extra work for nothing. Tried it with some jasmine rice last week and the flavor was completely different. I'm officially converted.
