I finally watched a master butcher break down a whole steer in Ohio

Last month I visited a shop in Cincinnati called Otto's Meats and watched their head guy break down a whole steer in about 45 minutes. He used a boning knife for almost everything and barely touched his saw, which was wild to see. Has anyone else picked up a technique just from watching someone work that changed your whole approach?

Not everything needs to be that deep though. Sometimes watching a pro just makes you realize you're slow, not that you're overcomplicating things.

Watching a pro mechanic swap a transmission in 20 minutes while I spend 5 hours just removing bolts is a humbling experience. They have the muscle memory and sequence down so nothing gets in their way. Most of our daily headaches come from doing things the long way because nobody taught us the short way. What's a task you learned to simplify by watching a pro do it first?
