Just found out how much beef we actually waste in the US each year
I was reading a USDA report from last month and it said about 20% of all beef produced in the US gets wasted somewhere between the farm and the plate. That's a huge amount of product just gone. It made me think hard about how we handle trim and portion control in our own shops. What's one thing you do to cut down on waste in your cutting room?

It's crazy how much waste we just accept as normal in our whole food system.

Totally agree about the waste we just accept. I worked in a grocery store and we'd throw out so much produce just because it looked a little weird. Perfectly good food, straight into the dumpster. It's built into how they order and stock stuff. Makes you sick to see it happen every single day.

My own fridge is a prime example of this problem. I buy vegetables with the best intentions, then watch them slowly turn into science projects in the crisper drawer. The guilt is real when I finally toss a bag of slimy spinach. We're all part of the cycle, even at home. It feels like the whole system, from the store to my kitchen, is set up to make waste easy.
