What about the smell in your fridge from the aging process? I tried a smaller cut once and the odor got into everything else, even sealed containers. It made me rethink the whole idea of using a shared fridge.

Nah, that's just a sign you didn't prep it right. You gotta wrap that thing up tight. I use a double layer of cheesecloth and then vacuum seal it. Zero smell. If it's leaking smell, it's probably drying out anyway. A good seal protects the meat and your butter.
