Went back to hand tying after my stuffer jammed on a 20lb batch
I used to run everything through my electric stuffer, even breakfast links. Last Saturday in Austin it seized up mid batch with 20 pounds of pork shoulder in the hopper. Had to dig it out by hand and finish tying all the casings manually. Now I only use the machine for big emulsified batches, and I swear the hand tied brats taste better anyway. Has anyone else switched back to hand methods after a machine failure?

That same thing happened to me with a 15lb batch of Italian sausage a few years back. Now I keep my stuffer for breakfast links only, everything else gets tied by hand. Honestly the texture is way better, the casings stay tighter and you get that nice snap every time you bite into it.
