My old sous at a spot in Austin told me to salt my fryer oil, and I finally tried it
About 4 years back my sous chef Marcus told me to throw a pinch of salt in the fryer oil before dropping fries, said it keeps them from sticking together. I figured he was messing with the new guy and never did it, until we got slammed on a Friday with 3 baskets going at once and everything clumped up into one giant potato brick. I tried the salt trick the next shift and the fries came out separate and crisp every single time, no clue on the science behind it. Any of you heard this one before, or does Marcus just have some weird magic I don't know about?
Tbh salt in the fryer is legit, seen it save a whole basket on a busy night, fries drop clean and never stick. Marcus knows what he's doing, some old cooks swear by it and honestly it just works.
