Warning: I ran my mise en place off a paper list for 11 years, now I use tape on the bench
For over a decade I kept my prep list in my back pocket and crossed stuff off with a golf pencil (always lost the pencil by service). Last month our expo quit and the new guy taped a strip of blue painter's tape right on his station and wrote the order of prep on it. I copied him the next shift and it cut my setup time at the grill station by a solid 20 minutes on a Friday. The list is right there in my eyeline instead of a pocket I keep patting down. Anyone else move their prep list onto the bench itself, and does it hold up when the tape gets wet?
Wait, you spent 11 years patting down your own pocket like you were checking for your keys and the fix was a strip of tape the whole time? That's the kind of thing that makes you want to go back in time and shake yourself. Blue painter's tape getting wet is the real question though, because in my experience it turns into a sad curling noodle once the steam hits it and then your list is just a wet ghost. I'd say press it down hard on a dry spot away from the splash zone and it'll mostly hold, or hit it with a piece of duct tape across the top edge like you're sealing a box. The pencil thing got me too, I lost more golf pencils than I care to admit, tape means you never have to hunt for one again.
