Lost a $900 deposit because I trusted a Google Doc screenshot

Last month a new client sent me a screenshot of a payment confirmation from PayPal. I started the project, sent over the files, and then the real PayPal email hit my inbox saying the payment failed. Turns out they edited the HTML in the screenshot to show a different amount. They vanished with my work, and PayPal said I have no protection because I never got an actual payment. Has anyone else dealt with fake payment screenshots? I'm thinking about requiring a signed contract before sending anything now.
