My sourdough starter finally hit a 3.5x rise after 4 hours, which I thought was impossible for my whole wheat one.

I was convinced my kitchen was too cold, but this morning's 68-degree proof proved me wrong and now I'm wondering if my starter's just finally mature after 6 months.

Right? It's like all the pieces just fall into place at once. You see it with artists and athletes too, just years of quiet work that finally shows up. Makes all that grinding seem worth it in the end, doesn't it?

Notice how often that happens with bands. They'll grind for years then suddenly everything clicks. Makes you wonder what finally changed for them.
