I used to think you needed a stand mixer for good bread, but a trip to my aunt's farm changed my mind.
I was visiting her in rural Iowa last fall and she asked me to help make dinner rolls. Her old hand mixer had broken, so we mixed the dough by hand in a big ceramic bowl. It took maybe 15 minutes of kneading on her counter, and I was sure it would be tough. Those rolls came out lighter and softer than any I've ever made with my fancy machine. Has anyone else found that simpler tools sometimes give better results?

Hand mixing just gives you a better feel for the dough.
