Just had my first successful sourdough loaf after 8 tries
I've been baking bread since January and my starter finally got strong enough to give me a good rise last Tuesday. The crust had that perfect crackle when I tapped it and the inside was soft with nice air bubbles. Anyone else struggle for months before getting sourdough to work right?

I finally got my starter going after about 4 months and honestly the first loaf that worked was the most satisfying thing ever. The crackle you mentioned is like bread victory music haha. Keep feeding that starter and it only gets better from here.

Yo 4 months is dedication right there, I had my starter die on me twice before it finally took off. Emma that crackle is legit my favorite part too, I swear I stand there listening to it like some weirdo for a solid minute after pulling the loaf out. The first time I got a decent ear on my sourdough I literally took a picture and sent it to my mom like look what I did haha. It's wild how something that takes so long to get right becomes the most rewarding thing in the kitchen.

Gotta say though, your starter might have been ready sooner than 4 months. Most folks I know get a good one going in about 2 to 3 weeks if the conditions are right. But hey, your mileage may vary, and that first loaf is the real test.
