Yeah, that "right before flame" part is exactly what changed things for me too. I used to always season burgers way in advance and they came out mushy, now I do it right before they hit the pan and the sear is SO much better. It really does make a huge difference for getting that crust right.

Serious question, my uncle told me to always check the crown before cleaning and he was totally right

My buddy @kimdixon had the same thing happen but he skipped the crown check and had to redo the whole job.

Oh man, that is classic old timer wisdom right there. I get what he means though - in the real world, site conditions are never perfect and you have to adapt. A sixteenth of an inch on paper is nothing when concrete is a quarter inch out of square. But saying it out loud like that without explaining? That's just grumpy gatekeeping, honestly. It took me years to realize he was talking about tolerances and practical work, not literally ignoring dimensions. Still, if he said that to a green kid, that's pretty unhelpful.

Yeah that client was REAL with you. I did the same thing - switched to Net 15 and started seeing money come in way quicker. People just pay faster when the deadline is closer.
