Overheard a baker at the market say they never weigh their flour, just scoop it

I was at the Saturday farmers market in Portland and this person was bragging about their 'perfect' cookies. They said they just scoop flour straight from the bag with the measuring cup. That is a GUARANTEED way to end up with a FAIL. I tested it last month, scooping versus weighing 3 cups of flour. The scoop method gave me over 150 grams EXTRA flour, which totally dried out my batch of scones. Baking is a science, not a guessing game. Has anyone else had a recipe totally ruined by this kind of lazy measuring?
