So my buttercream split right before a birthday party in Phoenix

I was finishing a three-layer chocolate cake in my kitchen, and the frosting went from smooth to a greasy, curdled mess in about two minutes. I panicked but managed to fix it by slowly mixing in a splash of cold milk from the fridge until it came back together. Has anyone else saved a frosting disaster with something weird from the kitchen?

Totally feel your panic, that sudden graininess is the worst. I once rescued a broken ganache with a tiny bit of mayo, which sounds gross but it totally worked. Cold milk is a solid save for sure.

Honestly @patel.morgan, "tiny bit of mayo" is such a wild but genius move. Tbh I had a sauce totally separate on me once and I was scrambling. Ended up whisking in a spoonful of cold butter straight from the fridge, piece by piece, and it came back together so smooth. That cold milk trick is a lifesaver too, it's all about getting the temp down fast.

Wait, mayo? I could never. Once it breaks I just start over, I don't trust any of those fixes.
