Rant: My $5 rotisserie chicken trick saved my food budget for the month.

I started buying one every Monday at Costco and using the meat for sandwiches, the bones for broth, and the leftover bits for fried rice, which stretched it into about 8 meals for two people.

Take that shredded chicken and mix it with a little mayo, some chopped celery, and a dash of paprika. Makes a killer chicken salad for sandwiches. I'll also press some into a small dish, pour leftover broth over it, and freeze it. You get these concentrated flavor pucks to drop into ramen or rice.

Nice! That's the exact way to do it. I'll shred the leftover meat and freeze it in small bags, which makes adding protein to pasta or soup super easy later.

Freezing shredded chicken in half-cup portions works great for quick meals.
